Bacon Cheeseburger Pie: A Geek Force Recipe

In my half-coherent rant recorded by Chris, I mumbled that bacon was the perfect “companion” food. In this article, I hope to expound upon that unsubstantiated statement and offer a recipe as proof!
First, let me be blunt: I’m not a big fan of bacon for the sake of bacon. Bacon with nothing else doesn’t do it for me. However, when bacon is coupled with something else, it’s irresistible to me. Put that lonely bacon on steak with cheese or chicken with cheese, and I’m forced to wipe the drool away with a dirty sleeve before pushing you out of the way for the right of first bite. To wit, I’m going to share with a delectable concoction that is sure to appeal to every bacon fan. It begins as a recipe from Betty Crocker, but becomes amazing when bacon is forced into the recipe. For even more of a charge, throw in some sausage for a Bacon and Sausage Cheeseburger Pie. Be forewarned: your very arteries will rebel against you!
Bacon Cheeseburger Pie
1 lb ground beef
½ teaspoon salt
1 cup shredded Cheddar cheese (4 oz)
½ cup Bisquick mix
1 cup milk
2 large eggs
Cooked shredded bacon
1 large onion, chopped (optional)
Cooked sausage, chopped (optional)
- Heat oven to 400 degrees F. Use a glass plate and spray liberally with cooking spray.
- In a skillet or skillets, cook the beef and bacon before setting aside. If you’re choosing to add onion and/or sausage, they should be cooked at this point as well. The beef will need to be drained and any additional ingredients will need to be shredded and chopped. Place the ingredients in the glass plate, spreading them about. Stir in the salt, moving the meat about with a spoon before sprinkling the cheese over your delicious pile.
- In a small bowl, mix the milk, eggs and Bisquik with a fork or whisk until it’s well-blended. Pour into the glass plate.
- Bake the concoction for about 25 minutes or until you can insert a knife in the center until it comes out clean.
- Eat!
